Pinwheel sandwiches are easy to assemble, visually appealing, and perfect for lunch at work. They consist of flour tortillas layered with ranch-flavored mayonnaise, sliced cheese, deli meats, and lettuce. The possibilities are endless, with endless combinations of fillings. For a crunchier twist, consider adding goat cheese, hummus, avocado, cucumber, or bell peppers. These can be made ahead of time, refrigerated for up to seven hours, and sliced when ready to serve. Trim the edges for extra appeal.
